GOUGERES

1 cup water
6 Tbsp (3 oz) butter
1 tsp salt
1/8 tsp freshly ground black pepper
1 cup sifted all-purpose flour
4 eggs
1 cup finely diced gruyère

Preheat oven to 400F and lightly grease a baking sheet.

Place water, butter, salt and pepper in a saucepan and heat until the butter is melted and mixture is boiling rapidly.

Add the flour all at once and continue to cook, stirring vigorously until the mixture forms a ball and leaves the sides of the pan clean. Remove the pan from the heat.

Beat in the eggs, one at a time, incorporating each thoroughly before adding the next. Stir in the cheese.

Place by small spoonfuls on the baking sheet, leaving space between them, as they will puff up.

Bake for 20-30 mins, or until well puffed and golden brown.
